3 tbsp butter
2 cups frozen ore-ida potatoes (they have a brand called Potatoes O'Brien which has onions and pepper, if you can't find use regular Ore-ida potatoes and add in the peppers and onions)
6 egg
2 tbsp milk
S&P to taste
½ cup shredded Pepperjack or any favorite cheese
½ cup shredded cheddar
6 slices of bacon cooked and crumbled

Set oven at 350º

Microwave butter and add the potatoes to be sure all are coated.

Whisk eggs, milk and S&P until blended then stir in both cheeses. Spoon over the potatoes.

Bake for 20 minutes uncovered until inserted knife comes out clean. Add little extra cheese then cook till melted. Sprinkle with cooked and crumbled bacon

I'll admit I haven't made this yet, but it sounded so good I thought it needed to be included. It will be on our Christmas morning table this year (2020) and we'll let you all know.
