Spaghetti Squash, cut in half length wise
Olive oil or coconut oil
Onions
Garlic
Celery
Butter
Parmesan or old cheddar cheese

Directions:
Directions:
Take a spaghetti squash and cut in half length wise. With olive oil or coconut oil, rub the squash on the inside edge before putting it face down on parchment paper.
Bake at 375º for approximately 1 hour or until you can put a knife through it.

Once cooked and cool enough to handle, scoop out the inside of the squash but KEEP the outer skin, set this aside for later.
Sauté onions, garlic, celery in butter.
In a bowl combine your sautéed onions, garlic, celery with the cooked squash. Place back inside the outer shell to finish off in the oven.
You can sprinkle a nice strong cheese like parmesan or an old cheddar and reheat until warm and the cheese has melted. Salt and pepper to taste.
I would place this on a cookie sheet to do the original bake and to finish it off.
