5 c onions (yellow, sweet)
6 tbsp butter
1 tbsp oil
2 cans chicken stock
4 cans veggie stock
˝ tsp sugar
1 tsp each: flour, salt, dijon mustard, pepper
1 c Sherry

For serving:
French bread
Parmesan
Swiss cheese

Directions:
Directions:
Sauté onions in butter and oil on low heat until caramelized, may take 1 hour +

Stir in sugar, cook for 2 min

Add flour, salt, mustard -- cook stirring for 3 min

Slowly add stocks and sherry, bring to boil

Simmer for 30 min

Serve with french bread in bowls, add soup, swiss & parmesan -- bake until bubbly
