Prepare the Broth
3 cups of water
Medium size Onion peeled
Salt and pepper to your liking
1 cube of concentrated Broth
If you like you can add 1 pearl of mastic gum and 1 cardmamom seed.

Mix all of the above and add the chicken over medium heat until the chicken is cooked to your liking. This usually takes 30 minutes.

Remove the chicken from the Broth.

Defrost the molokhia until it’s just cold but not frozen, do not completely defrost the bag or you run the danger of cooking the leaves.

5 big garlic cloves and 1/2 a teaspoon coriander powder.
Mince the garlic with the coriander and add some pepper for taste.

Drop the molokhia in the hot broth, and let it completely defrost in the hot broth, make sure the stove is not on!!!

In 1 tablespoon of butter fry the garlic and coriander mix to a medium brown, so as to not overfry the garlic.
Drop the mix into the molokhia.
At the very first bubble, remove the molokhia from the stove. Do not let the molohkia boil.

You can either bake or fry the chicken in butter to your liking.

White rice is a favorite side dish, but so is pita bread!! Enjoy the quintessential Egyptian comfort food!
