Makes one crust up to a 10 inch pie pan

1 1/2 Cups flour
Pinch sea salt or table salt
1/2 cup vegetable shortening ( if using butter, be sure it is very cold )
1 egg slightly beaten
1 tsp vinegar
cold water - up to 3 tablespoons depending on the humidity
plastic wrap


Mix flour and shortening, either by hand, mixmaster, or food processor. In a separate bowl, mix the egg then add the vinegar and stir well. Add this wet mix into the flour mix
Add just enough water until the pie crust dough forms a ball

Wrap the pie crust in plastic wrap and refrigerate at least a half hour before rolling

Add sugar - up to 2 tbsp for fruit pies

If using butter, try shredding it and freezing it before mixing into the flour. Heat from your hands softens the butter, so it's not as flaky a crust.
