2 c. toasted oats
2 c. whole wheat flour
2/3 c. brown sugar
3 1/2 oz. unsweetened coconut
1 1/2 c. sunflower kernels
1 c. golden raisins
1/4 c. honey
2 sticks butter, unsalted
1 tsp. baking soda
2 Tbsp. hot water

Preheat oven to 350º.

Mix oats, flour, brown sugar, coconut, sunflower kernels, and raisins in a bowl.

In a small saucepan, melt butter and honey together.

In a small bowl mix hot water and baking soda. Add to honey mixture. Pour mixture over dry ingredients and mix well. Drop dough by tablespoonfuls into mini-muffin pans and flatten slightly. Bake 10 minutes or until golden brown. Cool on wire racks.

Sam's Club makes bites that are very similar to these and they are delicious. I started making these about 15 years ago when I was working at a health food store. I would sell them to the store for resale. They were a big hit!
