1 - (17.5 ounce) package Potato Gnocchi (the shelf kind found by the dried pasta)
1 - Orange Bell Pepper - seeded and cut into 1" cubes
1 - Yellow Bell Pepper - seeded and cut into 1" cubes
1 - small Red Onion - cut into eighths
1 - cup (I use more) cherry tomatoes
Sausage of choice (2 -Italian Sausage or Bratwurst - whatever sausage you choose - cut into 1/2' thick rounds

4 Tbsp Olive Oil (i use the flavored but not necessary)
1 tsp Garlic Powder
1/2 tsp Thyme
1 tsp Kosher Salt - (plus more to taste)
1/2 tsp fresh ground Black Pepper - (plus more to taste)
1/4 cup fresh Parsley

Fresh grated Parmesan Cheese for topping

Directions:
Directions:
Preheat oven to 425º.
Set out 2 baking sheets.
Mix gnocchi, veg & sausage in a large bowl.
Combine olive oil, garlic powder, thyme, salt & pepper & drizzle over veg mix.
Toss until evenly coated & spices & oil are distributed.
Spread out in a thin layer on 2 cookie sheets to ensure even roasting and lots of golden browned bits.
Place in oven and bake until gnocchi & vegs are beginning to take some color - 15 - 20 mins.
Remove, stir and redistribute in an even layer and cook until there are more golden bits, the sausage is sizzling and vegetables are tender, 5 - 10 more mins.
Remove from the oven and garnish with parsley & any other fresh herbs desired.
(I like to sprinkle with fresh grated Parmesan Cheese as well - just after they come out of the oven.

This makes a lot - you can cut recipe in half if desired.
Throw in (or delete) any vegetables you have in your fridge to use up. I have put asparagus etc in.
Delicious way to use up what you have in fridge and quick & easy.
