Ingredients: 1 ½ cup sifted icing sugar 1 cup butter 1 egg 1 tsp. vanilla ½ tsp. almond extract 2 ½ cup flour 1 tsp. baking soda 1 tsp. cream of tarter
Icing Recipe 4 cups sifted icing sugar 3 tbsp. meringue powder 9-10 tbsp. warm water flavoring to taste

Directions:Cream butter, beating well then add sugar and flavoring. Add sifted dry ingredients. Mix well. It is very similar to shortbread. Cover and refrigerate overnight.
Let warm until you are able to roll out to about ¼ thick. I would roll about a third of dough on a well floured board at a time. It is just like pie dough to roll. Cut into shapes and slid onto a parchment lined baking sheet with a thin lifter. Bake at 325' for 8-10 min. until edges begin to brown. Cool on cooling rack.
Icing. I usually make half a batch. Beat meringue powder and water till fluffy. Add icing sugar till it is thick enough to almost hold shape. Add a pinch of salt and a bit of almond and or vanilla. It is a trial and error. You should be able to easily spread and when left to rest it will flatten. You can be as creative as you like. It can be very time consuming. |
