Ingredients: 3 Large Eggs 1 ¼ Cups Milk ¾ Cup Flour 1 Tablespoon White Sugar or choice of sweetener ½ Teaspoon Salt 1 Tablespoon Butter or as needed

Directions:Beat eggs in a bowl with an electric mixer, 3-5 minutes until they are lemon colored. Stir in milk. Sift dry ingredients together in a separate bowl. Add to egg mixture. Mix until smooth. Heat griddle over medium heat, grease with butter. Drop tablespoonfuls of batter on the griddle; spread to make thin pancakes. Cook until light brown on bottom, 1 to 2 minutes. Flip and continue cooking until second side is light brown, 1 to 2 minutes more. Repeat with remaining batter. Sprinkle with sugar or serve with lingonberry syrup. |

Notes: cheater style: follow pancake mix directions but add the three eggs and milk to make a thinner batter. Can also be used for crepe (French) or Blini (Russian) batter. For Blini, add 1/2 teaspoon of vinegar and serve with honey, currant jam or smetana (sour cream) for an authentic Russian taste.
