1 stick Butter
1 unbaked pastry shell
1½ cups sugar
½ cup cream
2½ cups walnuts roughly chopped
salt to taste

Preheat oven to 400º F.
Tear foil twice as large as pastry crust. Fold in half and smear one side with butter.
Lay buttered side onto pastry crust. Weight foil with a pile of dried beans or rice.
Bake in preheated oven 12 minutes.
Remove foil and decrease temperature to 350º F.
Continue baking until crust is a beautiful shade of brown.
Remove from oven and let cool on a rack while you prepare the filling.

Put sugar in a heavy 6-8" saucepan or deep skillet with a tablespoon of water over medium heat. Cook gently shaking the pan occasionally until sugar melts.
Then cook stirring occasionally and up on sides with a heat proof flexible spatula until mixture turns golden.
Turn heat to low then carefully add 1 stick of butter and cream.
Cook stirring constantly until butter melts and mixture is uniform.
Stir in walnuts and a large pinch of salt.
Spread on baked crust. Refrigerate for 1 hour then sprinkle with a little more salt and serve.
