1 Head Garlic
1 tsp Olive Oil
Salt and pepper to taste
1 cup Jarlsberg Cheese freshly grated
¼ cup Sour cream or Greek Yogurt
4 oz Cream Cheese softened
1 large Shallot diced
¼ cup Green onion chopped
½ cup Mayonnaise

Directions:
Directions:
Preheat oven to 400º F.
Lop off top of garlic head.
Place in a small oven safe dish.
Season with salt and pepper and drizzle with olive oil.
Cover. Roast 40-45 minutes.

Let garlic cool.
Remove all cloves. Smash with fork.
In a large bowl, combine sour cream (greek yogurt), mayonnaise and cream cheese until smooth.
Add cheese, onion, shallot and smashed garlic. Stir to combine.
Add salt and pepper to taste.
Serve with chips or pretzels.
