Ingredients: 8-12 slices of thick sliced bacon - cooked, cooled and crumbled 16 ounces shredded triple pepper jack cheese blend ( I buy this at WinCo) 16 ounce shredded medium cheddar cheese 8 ounce shredded triple cheddar cheese bread One 8-12 ounce container of spreadable cream cheese Heavy cream and milk (I don't have measurements for these) One package penne pasta Salt, pepper, paprika, panko breadcrumbs 13 x 9' baking dish spray with cooking spray

Directions:Preheat oven to 350 º Boil pasta until just tender (just starting to soften but not really edible yet) drain and spread in baking dish ( I usually set the baking dish on a cookie sheet with sides because I can be somewhat messy when I cook and there is a chance the cheese sauce can overflow the baking dish either before or after baking) Mix in bacon with pasta Mix 8 ounces of the pepper jack cheese and 8 ounces of the medium cheddar cheeses with the pasta In a non-stick pot on mediumish heat, blend together cream cheese, milk, cream until warm and smooth. Slowly add the remaining pepper jack and remaining cheddar cheese to sauce stirring after each addition until smooth, season cheese sauce to taste Pour cheese sauce over pasta in the baking dish and gently stir to mix pasta and sauce Sprinkle a layer of triple cheddar cheese blend on top of the pasta sauce Sprinkle panko breadcrumbs over the triple cheddar cheese Sprinkle another layer of triple cheddar cheese over the bread crumbs Bake at 350º until macaroni and cheese is bubbly and the top is golden brown Let set for 15 minutes and serve |

Notes: This makes a nice side dish if you are having company or a nice main course with a hearty green salad with a lot of veggies in it on the side if it is just a few people. My husband and I can finish this off in about two and half days when we have it for dinner the first night and then for lunches the next two days.
