¾ c. vegetable oil
¾ c. flour
2 medium onions, chopped
3- 4 cloves garlic, minced
2 lbs. medium shrimp, peeled
2-2½ cups liquid (seafood broth, chicken broth or water)
¼ cup chopped green onions
salt, pepper & red pepper flakes to taste

Season shrimp with salt and pepper. Heat oil in a heavy pot over medium/high heat. Add flour and whisk/stir constantly to achieve a dark roux. Add onions and garlic and cook until softened, stirring frequently. Add shrimp to roux, stirring until shrimp begins to turn pink. Add liquid a little at a time stirring to form a smooth gravy. Add green onions. Lower heat to simmer and cook for 30 - 40 minutes to allow flavors to blend. Add more liquid if a thinner gravy is preferred. Serve over rice.
