1 Tbsp. plus 1 tsp. vegetable oil
1 c. carrots, sliced and thinly peeled
2 c. broccoli florets
1 lb. boneless, skinless chicken breast, cut into 1" pieces
4 cloves garlic, minced
1/4 c. chicken broth
1/4 c. soy sauce
3 Tbsp. honey
2 tsp. cornstarch
salt & pepper to taste

heat 1 tsp. oil in a large skillet over medium heat. Add broccoli and carrots, cook for 4 minutes until tender. Remove veggies and set aside. Add remaining oil. Season chicken with salt & pepper. Add chicken to pan in a single layer. Cook for 3-4 minutes on each side until golden brown and cooked through. Add garlic to the pan and cook 30 seconds. Add veggies back to the pan and cook for 2 minutes.

In a small bowl, whisk together chicken broth, honey, and soy sauce.

In a small bowl, whisk together cornstarch and 1 Tbsp. cold water.

pour the soy sauce mixture over the chicken and cook for 30 seconds. Add cornstarch mixture and bring to a boil. Cook for 1 minute or until sauce just starts to thicken. Remove from heat and serve.
