3 lbs chicken drummettes or 3 lbs boneless skinless chicken, cubed
1 medium onion, diced
5-6 garlic gloves, diced
1 tbsp sugar
3-4 bay leaves
Ground black pepper
2 tbsp olive oil

Sauce:
½ cup soy sauce
¼ cup water
¼ cup vinegar

Directions:
Directions:
Sauté garlic and onions in the olive oil over medium heat in stock pot until tender, remove from heat.

Add chicken to pot with garlic and onions.
Make enough sauce to cover ⅔ of the chicken.

Return to heat and bring to a boil, stirring occasionally.
Add bay leaves to mixture, cover and reduce heat to simmer.

Cook until chicken is soft, stir in sugar and remove from heat.

Serve over rice.
