1 cup of chopped red onions or shallots
Zest and juice of 1 lemon or 2 limes
2 5-6oz cans of tuna packed in olive oil
2 15oz cans of Great Northern beans, rinsed and drained
cup loosely packed chopped parsley or arugular
A couple of dashes of hot sauce
tsp ground black pepper
Salt and more extra virgin olive oil to taste

Sprinkle some lemon juice over the chopped onions while you prepare other ingredients to take off some of their "bite."

Drain oil from the tuna and add to large bowl. Add beans and gently stir to combine. Add onions, herbs, pepper, zest, and juice and mix to combine. Add hot sauce to taste. If salad needs more acid, add a little more lemon juice. If it seems to dry, add some EVOO. Add salt to taste.

This should last in the refrigerator for several days if tightly covered.
