2 c. flour
1 c. sugar
4 tbsp. cocoa
2 tsp. baking soda
1 tsp. salt
1 c. cold coffee
1 c. mayonnaise

Preheat oven at 350º F
Mix together dry ingredients
Add cold coffee and mayonnaise
Put in an oblong cake tin
Bake at 350º F for 35 minutes

A 10 inch round cake tin also works well for this cake.

This cake is also known to all of us as Jan's Chocolate Cake. Jan Pringle was our neighbour back in the late 1960's when we lived in Rexdale. She gave Mom the recipe and it has been a family favourite ever since.
