2 C Raw Grated Carrots
3 C Flour
1 Small Can Crushed Pineapple and Juice
2 C Sugar
1 1/2 C Oil
3 Eggs
1 1/2 C Chopped Nuts
2 Tbsp Grated Orange Rind
1/2 C Coconut
2 tsp Baking Soda
2 tsp Vanilla
1/2 tsp Salt
1 tsp Cinnamon

FROSTING
2 C Powdered Sugar
1/2 Stick Butter or Margerine
8oz Cream Cheese, softened
1 1/2 tsp Vanilla

Directions:

CAKE
Mix all dry ingredients together, add carrots, oil, pineapple, orange rind, beaten eggs, coconut, and chopped nuts. Bake 1 hour in 350º degrees until done.

FROSTING
Beat cream cheese and butter until very soft. Add sugar and vanilla, and beat until smooth and creamy.
