8 large potatoes, baked
1 cube butter (1/2 c.)
1 large pkg (16 oz) sour cream
1 can cream of chicken soup
3 green onions with tops (⅓ c.)
2 t. salt
½ t. pepper
¾ c. grated cheddar cheese
More cheese for topping

Great for left over baked potatoes.
Bake potatoes with skin on. Cool and peel. Grate potatoes with large grater into a large bowl. In saucepan melt butter. Add chicken soup, sour cream, salt and pepper. Stir in green onions. Mix sour cream mixture into potatoes. Add ¾ c. grated cheese. Pour potatoes into greased casserole dish. Top with additional cheese.
Bake 325° for 25 to 30 minutes, or until heated completely through.
May be made ahead 1-2 days and cooked when needed.
