Cheesy shrimp ciabatta Recipe

1/2 Lb cooked shrimp
1 T butter
1 t old bay
Salt and pepper to taste
1 large loaf ciabatta bread, sliced in half like a large sandwich
1/2 c mayo
1/4 c fresh dill, chopped
1/4 c fresh chives , chopped
2 cloves garlic, minced
1 c cheddar jack cheese

Melt butter, add shrimp and old bay, cook for a minute or two til well coated with seasoning. Remove from heat, let cool, then chop into small pieces
Preheat oven to 350
In bowl mix shrimp, mayo, dill, chives, garlic, cheese, salt and pepper. Spread on cut ciabatta bread.
Line baking sheet with parchment paper, place loaves on sheet, bake 10-13 minutes, check at 10. Slice in sticks, serve warm

So, I use fresh shrimp, sautéed in pan with butter, old bay, Cajun seasoning and whatever moves me. Or leftover shrimp would do, if there is such a thing. Cook as needed, 6-8 minutes? Martha loves Parmesan, so often I just use that cheese, any cheese that doesn’t overwhelm shrimp is good. Mayo amount can vary, I want moist not dripping. I have been using a store bought freezer garlic bread as base. Slightly undercook, spreads with mixture and then cook. Is great entree with a salad. Mix can be refrigerated and used as needed (within a couple days). Hope you enjoy!
