Ingredients: 4 cups chopped cooked chicken 1 large white onion, chopped 1 large green bell pepper, chopped 1 (10 oz) can Cream of Chicken soup 1 (10 3/4 oz) can Cream of Mushroom soup 1 (10oz) can diced green chilis 1 (10 oz) diced tomatoes and green chilis (Rotel tomatoes is a great option) 1 garlic clove, minced 1 tsp chili powder 12 (6") corn tortillas 2 cups shredded sharp cheddar cheese

Directions:Stir together the first 8 ingredients.
Tear tortillas into 1" pieces; layer one third of the tortilla pieces in a lightly greased slow cooker.
Top with 1/3 of the chicken mixture and 2/3 of the cheese. Repeat layers twice.
Cover and cook on LOW 3 1/2 hours or until bubbly and edges are golden brown.
Then uncover and cook on low for 30 minutes.
Wonderful served as is or you can serve over rice. |

Notes: To end up with four cups diced chicken, cook 1 1/3 pounds of raw, skinless boneless chicken. Or, buy a cooked rotisserie chicken that weighs between 2 1/3-3 pounds. By the time you take off the skin and bones, you'll end up with the right amount.
This is a great Saturday or Sunday slow cooker meal - it's not a recipe that can cook for hours and hours.
