1 lb. pork tenderloin, trimmed
tsp. salt
tsp., plus ⅛ tsp. black pepper
2 tsp. olive oil, divided
2 cloves garlic, minced
c. dry white wine (or chicken broth)
c. low sodium chicken broth
Grated lemon zest and 1 tbsp. lemon juice
1 tbsp. chopped fresh sage or rosemary

Cut pork into 12, 1-inch thick slices. Sprinkle pork on all sides with ⅛ tsp. salt and tsp pepper. Heat 1 tsp. oil in a large, heavy skillet over medium-high heat. Add pork and cook, turning once until pork is browned and internal temperature reaches 145, about 1 minutes on each side. Transfer pork to serving platter and cover to keep warm.

Add remaining 1 tsp. oil to skillet. Add garlic and cook, stirring constantly, until garlic is fragrant, about 30 seconds. Add wine and broth. Increase heat to high and cook, stirring to scrape up browned bits from bottom of the skillet, until liquid is reduced by two thirds, about 5 minutes.

Remove skillet from heat and stir in remaining ⅛ tsp. salt, ⅛ tsp. pepper, the lemon zest and juice, and the parsley. Serve pork medallions drizzled with sauce.
