Ingredients: 2 lb. boneless, skinless chicken breast, cut into strips (or you can use pre-cut chicken tenders) 1 1/2 tsp. kosher salt 1 tsp. black pepper 1 box Millville Honey Crunch & Oats Cereal *SEE NOTE* 2 eggs 1/2 c. honey

Directions:Preheat the oven to 350º. Line baking sheet with parchment paper.
Rinse chicken and pat dry with paper towels. Slice into tender size strips.
Use a food processor or grinder and crush cereal to a fine crumble, but still leave some crunchy texture. Pour into a coating dish and set aside.
In another coating dish, beat eggs. Add honey, salt, and pepper. Set aside.
To assemble, dip chicken into the egg mixture, then into crushed cereal. Place on baking sheet and bake 15-20 minutes or until chicken is golden brown and has reached 165º internally. |

Notes: The first time we made this the only complaint was that the chicken tenders were not cut large enough. It is definitely a different taste because of the sweet cereal that is use but, other than that, there were no complaints and no chicken left in the fridge.
Regular ketchup and ranch dressing are not good dipping sauces for this. It really should be served with a sweet jam sauce or a fiery sauce. The Apricot Ketchup or Creamy Honey Mustard is a nice dipping sauce for it.
*NOTE* I bought this cereal at Aldi. The original recipe called for 2 1/2 c. cereal but since there wasn't much left in the box, I just went ahead and used all of it. Also, they were out of the original when I bought the cereal so I had to use the cereal with almond. No one knew the difference until now. LOL!
