1 1/4 cup of Gluten Free Flour~ Bob's Red Mill Gluten Free Baking Flour
1/3 cup of Fibergy
1 cup Almond Flour
1 1/3 cup organic applesauce (no added sugar)
1/2 cup organic butter
1 cup coconut sugar
1/2 cup chopped walnuts
1 apple, peeled and grated
2 tsp. baking soda
1/2 tsp. vanilla
1/2 tsp. salt
1 tsp. cinnamon
3 eggs

Directions:
Directions:
Preheat the oven to 350. Cream butter and sugar together. beat in eggs one at a time. Stir in applesauce, grated apple and vanilla. In separate bowl stir together remaining dry ingredients. Add to wet mixture, stir by hand until well combined. Place in muffin baking cups in a muffin pan. Bake at 350 for 40-50 min. or until an inserted toothpick comes out clean. Cool 10 min. before removing from pan.

This muffin is one of my families favorite gluten free muffins. It is especially tasty in the fall when the weather starts getting cooler and you are looking for warming foods. They go great with a hearty soup!
