3/4 c. sugar
1 1/2 c. mashed bananas (about 3 large - the more ripe and brown they are, the better)
3/4 c. vegetable oil
2 eggs
2 c. all-purpose flour
1/2 c. chopped nuts (walnuts, pecans, your choice)
1 tsp. baking soda
2 tsp. vanilla
1/2 tsp. baking powder
1/2 tsp. kosher slat

Directions:
Directions:
Heat oven to 325º. Grease a 9x5 loaf pan. Mix sugar, bananas, oil, and eggs in a large bowl. Stir in remaining ingredients. Pour into pan. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Let cool 10 minutes in the pan, then loosen sides of the loaf pan and remove from pan. Let cool completely before slicing.
