Beef Stroganoff Recipe

6 Tbsp Butter
2 Tbsp Minced Onion
2 lbs Beef tenderloin
1 lb Mushrooms sliced
Salt to taste
Pepper to taste
1 tsp Nutmeg ground
1 cup Sour Cream
1 16oz Wide egg noodles cooked

Melt 3 Tbsp of the butter in a heavy skillet over medium heat,
Add the onion and cook slowly until transparent.
Remove onions and set aside.
Turn the heat to medium-high, add the beef. Cook briefly turning to brown on all sides.
Removed the beef and set aside with the onions.
Add the remaining 3 Tbsp butter to the skillet. Stir in the mushrooms, cover and cook for 3 minutes.
Season with salt and pepper and nutmeg.
Wisk the sour cream and add to the pan. Do not allow sour cream to boil.
Return the beef and onions to the skillet. Heat through.
Fold in cooked egg noodles.
