2 Tablespoons olive oil
3/4 cup finely shopped, toasted pistachios
1/2 cup panko (Japanese bread crumbs)
1/4 cup fresh Italian parsely, chopped
2 tablespoons fresh chives, finely chopped
2 tablespoons fresh basil, finely chopped
Salt to taste
Pepper to taste
6 Halibut fillets, each 8 ounce and 1 inch thick
Several lemon weges

Directions:

Preheat oven to 450 degrees
Oil a rimmed baking sheet
Combine pistachios, panko and herbs in a small bowl and sprinkle with salt and pepper
Brush each fillet with 1 tablespoon melted butter and place on baking sheet. Pack pistachio mixture atop fish. Roast fish for about 8 minutes. For crisp topping, broil fish for additional minute until pistachios are toasted.

Plate and garnish with lemonwdges.

Instead of pistachios you can use almonds, pecans, walnuts or other nuts
