1 C. GF flour

Dry Ingredients:
¼ tsp. Xanthan Gum
2 tbsp. baking powder
⅛ tsp. salt
1 tsp. sugar
1 tsp. baking soda

Wet Ingredients:
3 eggs
2 C. sour cream

Directions:
Directions:
1) Sift flour and then measure.
2) Resift flour with dry ingredients into large bowl.
3) Separate egg yolks from egg whites. Set egg whites aside.
4) Beat yolks together in small bowl.
5) Add sour cream and beat together.
6) Make a hole in the center of dry ingredients.
7) Add sour cream and yolks with a few stiff stokes.
8) Stiffly beat egg whites until foamy.
9) Fold egg whites into mixture.
10) Pour mixture onto waffle iron.
11) Cook until steam stops escaping from iron.

Johnny had a classmate in preschool named Beth Wood. Her mom had us over for lunch one day and made these waffles. They have become a favorite request.

A favorite breakfast treat had been frozen Eggo cinnamon waffle minis, prior to this. The kids would get them every so often as a special treat. One day Becca came to me and asked if she could have waffles for breakfast the next day. After her request she added, "you know, not the real waffles, the fake ones that Beth's mom showed you how to make." LOL!
