Dry Ingredients:
5 C. sifted GF flour
1 ¼ tsp. Xanthan gum
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

Wet Ingredients:
1 C. shortening
2 C. sugar
1 C. sour cream
1 tsp. vanilla
Directions:
Directions:
1) Sift together dry ingredients.
2) Mix wet ingredients together.
3) Beat in a large bowl until light and fluffy.
4) Add dry ingredients to large bowl, stirring well.
5) Cover and chill dough in refrigerator for several hours.
6) Roll out dough small amounts on a lightly floured pastry sheet.
7) Cut with cookie cutter/s.
8) Bake @ 350ºF on ungreased cookie sheet for 7-8 minutes.
