1 lb low-fat spicy turkey sausage
1 lb raw sweet potato
1 c. diced onion
1 c. diced green bell pepper
1.5 c. peeled, sliced/diced Granny Smith apple
3 c. diced tomatoes
12 oz beer or ginger ale
1 t. dried thyme
Salt and pepper to taste

Cut sausages into one-inch pieces. Peel sweet potatoes and cut into one-inch cubes. Saute' sausage, sweet potatoes, onion and green pepper on medium high for 5 minutes. Add the apple, tomatoes, beer or ginger ale, and thyme. Bring to a simmer, cover and simmer gently for 15 minutes. Add salt and pepper to taste.

White stew simmers, place bread or rolls in oven to warm. I prefer thick sourdough with parmesan and garlic liberally sprinkled on top.
