7 qt. jars
sliced apples

9 c. hot water
3½ c. sugar
1 c. sugar
1 c. cornstarch
¼ tsp. nutmeg
2 tsp. cinnamon
¼ tsp. cloves (optional)
1 tsp. almond extract
1 c. cold water
¼ tsp. salt
3 tbsp. lemon juice

Fill qt. jars with sliced apple. In large kettle, bring to a boil water and sugar. Mix all other ingredients. Add to hot liquid. Cook until clear. Pour over apples and seal. Process in boiling water 25 minutes. For peach pie filling-same ingredients, but omit cloves and almond extract.
