⅔ C. Butter
2 small Onions
2 Heads of Broccoli, cut into small pieces.
1 tsp. Garlic, minced
2 packets Onion Soup Mix
6 C. Water
1˝ C. Heavy Cream
4˝ C. Milk
3 tbsp. Corn Starch
1 C. Cheddar Cheese, shredded
Salt & Pepper to taste.

Directions:
Sauté Onions in ˝ C. of Butter for about 5 min. or until tender.
Add Broccoli and Garlic, sauté for an other5-7 min.
In a medium saucepan malt 3 tbsp. Butter.
Add Corn Starch whisk well.
Add the Cream and 2˝ C. Milk, stirring constantly, until it begins to bubble & thicken.
Whisk water with the Soup Mix.
Add to Broccoli.
Add Cream mixture to Broccoli.
Mix well.
Add remaining Milk.
Add Cheese gradually, stirring until Cheese dissolves.
Bring to a boil, then turn down and let simmer for 15-30 minutes.
Add salt & Pepper to taste.
