2 Cup Sugar
2 Cup Plain Flour (sifted)
1 Tsp Salt
1 1/4 Cup Oil
2 Tsp Soda
2 Tsp Cinnamon
4 Eggs
3 Cup finely chopped Carrots

Directions:
Directions:
Mix dry ingredients. Add oil, eggs and carrots. Mix well. Can add nuts if desired. Bake in 2 9” pans or 3 8” greased and floured pans 35 minutes in 325 degree oven. Or bake in 13”x9”x2” pan for 50 minutes at 350 degrees. Check for doneness.

When make this, I use the Cream Cheese Frosting, but I double it.
