1 prime rib roast (2-9 lb) trimmed of fat
1/4 cup Herbes de la province or your own combination of spices (see recipe in the cook book here).
1/4 cup extra virgin olive oil

Place rib roast in shallow baking pan.

In a bowl, mix Herbes de la Provence or your own combination to include garlic, black pepper, rosemary, thyme, mustard (crushed seeds or Grey Poupon) and a little salt with the olive oil.

Rub spices and EVOO all over the roast and let it marinate for 30 minutes.

Preheat oven to 460º F about 10 minutes into the marinade.

Place pan on lower rack of the oven and roast uncovered for 45 minutes at 460º F.

Reduce oven temperature to 350º F and roast an additional 45 to 50 minutes or until done to your taste (140º F for medium rare, 155º F for medium rare)

Remove roast from oven and cover loosely with foil. Allow to rest for 15 minutes before serving.

1 cup sour cream
2 tbsp. lemon juice
2 tbsp. prepared horse radish
2 tbsp. mayonnaise
