3 lb. Brisket or Chuck Roast
1 Chopped Onion
5-6 New Potatoes, or 3 Large Potatoes Cut Up
2 Chopped Carrots
Salt
Pepper
1 C. Water, Beef Broth, or Liquid of Choice

Directions:
Directions:
Put onion, potatoes and carrots in crock pot. I try to get potatoes around side. Season meat on all sides with salt & pepper (or your favorite seasoning salt). Put meat on top of vegetables. Add liquid. Cook on low 8-10 hours. Meat will fall apart easily.

To make easy BBQ brisket, omit carrots and potatoes. Season brisket, put in crockpot with 1 cup favorite BBQ sauce, cook on low 8-10 hours. When done, shred meat and add more sauce to taste. Great on good buns as sandwiches.
