8 slices bacon, cut up
1 onion, chopped
1 c. celery, diced
1 c. sliced carrots
10 potatoes, cubed
1 c. water
1 can cream of celery soup
1¾ c. milk
2 T. parsley
salt and pepper to taste
16 oz. sour cream


Directions:
Directions:
Fry bacon until crisp, add onion and celery and sauté for 2-3 minutes. Precook
carrots and potatoes for 15-20 minutes in a large sauce pan. Add bacon mixture
and stir. Add water, cream of soup, milk and seasonings. Add sour cream and heat
to serving temperature but do not boil. Serve with crusty bread or crackers.
