Chicken Salad Recipe

2-3 c chicken, chopped lightly
1 c celery, cut into small pieces
1 c grapes, quarterly (green or red)
1 c pecans, coarsely chopped
c Miracle Whip
c mayonnaise
3 T. lemon juice
2 t. mustard
1 t. sugar
1 T. poppy seed
1 T. parsley
salt and pepper to taste

In medium size bowl combine chicken, celery, grapes and pecans. In smaller bowl
combine Miracle Whip, mayonnaise, lemon juice, mustard, sugar, poppy seed and
parsley. Blend well. Add salt and pepper for taste. Pour over salad mixture and
fold in. May add a bite of milk to thin out dressing.

I like to serve this as a sandwich with fresh baked bread. If you like it can be used as
filling for a chicken salad...use your favorite lettuce salad along with freshly ground pepper and Parmesan cheese. Serve with a variety of crackers.
