Ingredients: Potatoes: 3 lb redskin potatoes - diced ½" ¼ c olive or vegetable oil 1 tbs seasoned salt (Lowry's) 1 tsp pepper
Bacon OR sausage OR sauted vegetables: 1 lb cooked and drained
Eggs: 20 eggs ½ c milk 1 tsp seasoned salt (Lowry's) ½ tsp pepper
Other: 16 oz shredded pepper jack 16 oz shredded sharp cheddar Flour tortillas (large)

Directions: |
Directions:Dice potatoes in 1/2 inch cubes. Toss with oil and seasoning. Bake at 400 degrees on two sheet pans for 20 to 30 minutes. Cool when done. Cook bacon (or sausage or vegetables) and drain fat. Scramble eggs and cool. Toss cooled potatoes, meat, eggs, and half of the cheese (8oz pepper jack and 8 oz sharp cheddar). Scoop 1/2 heaping cup of egg mixture and 1/4 cheese into center of tortilla. Roll into a burrito and wrap in foil. Freeze burritos.
To heat: preheat oven to 350 degrees. Place burritos (in foil) into the oven and bake for approximately 15 minutes. Or, microwave 2 minutes (or until heated through) |

Notes: These Breakfast Burritos are great for a make ahead dish when you have a large group or just prepping for the week ahead. They freeze well. We eat them for breakfast or dinner. My Dad (Gerald Thomas) spent the night at our house once as he and Andy were going turkey hunting early the next day. I served these burritos to Dad for breakfast that morning. Dad called me the next day after he got home and asked me for the recipe. He said "I get tired of eating the same thing every day for breakfast....those were really different". Different in a good way this time I guess! It was a well known fact that if Dad said "It's different" ....that was not a good thing!
