Ingredients: 9 Eggs Beaten
1 Lb. Spaghetti
Oil
Parmesan Cheese
Salt

Directions: |
Directions:Cook spaghetti al dente! Drain off water leaving
the pasta moist but not too wet. Take the 9 beaten
eggs and add a generous amount of parmesan
cheese and mix thoroughly in the same pot the
spaghetti was cooked in. (Pot & pasta MUST NOT
be too hot, almost cool/room temp) On the stove
heat enough oil to cover the bottom of a
medium / large pan, can be of any shape to
a medium heat. Place the entire mixture into
the heated oil. Eggs should start to cook
immediately. Using a fork or a spatula look
underneath to see when the pasta is cooked
to a golden brown. When this happens place
a plate one the pan and flip the pasta on to it.
Add a little more oil to the pan and place the pasta
back into it. Again checking for when the underside
is golden brown. Remove from pan and place on a
large serving plate. Let the "pie" sit for at least
15 minutes for everything to settle into place.
Cut into pieces and enjoy pasta on the go! |

Notes: O.K. TRUTH - This is Rose's recipe handed
down to her from her Mom Clara....BUT she
did not have this in the book! I am credited on
this because this is what I was taught & it is
exactly how I cook it..Per Mom's instructions!
TIP: If you let this set overnight in the fridge
& reheat the next day the flavor is MORE
intense, I have started playing with the recipe
and adding sautéed sliced garlic to mine.
2nd TRUTH - The first time I attempted this I
ended up with a huge mess of just pasta &
partially cooked eggs!!
3rd TRUTH - Me: Mom why do we use 9 eggs?
why not 10 or 12?
Rose: Cause that's what Grandma used.....
Me: Yeah but why 9?
Rose: Hey use whatever you want, but when
it doesn't come out right don't bother me!
Me: Uh, o.k. thanks Mom.....LOL
