½ c. confectioner's sugar
2 c. + 6 T. flour; divided
pinch of salt
1 c. butter; room temp and cut into 8 pieces
4 eggs
2 c. sugar
6 T. lemon juice
1 grated rind of lemon

Directions:
Directions:
1. Preheat oven to 350º. Lightly grease a 13x9 inch pan.
2. In food processor, blend conf. sugar, 2 c. flour and salt. Add butter and pulse until mixture is crumbly. Press into pan and bake 20 minutes.
3. Meanwhile, beat eggs, sugar, 6 T. flour and lemon juice until well-combined. Stir in rind. Pour on the top of hot crust and bake for 25 more minutes. Cool completely and then sprinkle with confectioner's sugar. Cut into squares.
