Ingredients: Crust: 1 ¼ c. unsalted butter; room temp (2 ½ sticks) 6 T. sugar 2 large eggs 1 ½ t. vanilla extract 2 ¼ c. flour ¼ t. baking powder ⅛ t. salt Topping: 1 c. butter (2 sticks) ½ c. light corn syrup 1 ½ c. packed light brown sugar 2 T. heavy cream 1 lb. pecans; chopped

Directions:1. Preheat oven to 350º. 2. For the crust, beat the butter and sugar in bowl of mixer with paddle attachment; approx. 3 minutes or until light. 3. Add eggs and vanilla and mix well. Sift together flour, baking powder and salt. Mix the dry ingredients into the batter on low speed until just combined. 4. Press the dough evenly into ungreased 9x13 pan; making an edge like you would a crust~1 inch tall. It will be sticky; sprinkle the dough and hands lightly with flour. Bake for 15 mins. until set but not brown. Allow to cool. 5. For the topping, combine butter, corn syrup and brown sugar in a saucepan. Cook over low heat until butter is melted. Raise the heat and boil for 3 minutes. Remove from heat and stir in cream and pecans. 6. Pour over the crust; try not to get filling between crust and pan. Bake for 20-25 min. until filling is set. 7. Remove from oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve. |

Notes: Pecan pie is a favorite in our house for Thanksgiving. I saw these by the Slow Roasted Italian and had to try them. Now we make them for potlucks and other get togethers. They are a mix between a pecan pie and pecan shortbread cookies. So yummy!
