4 chicken breasts
½ small eggplant
2 cans tomato sauce
1 tbsp dried Italian seasoning
1 cups Panko bread crumbs
1 cup grated provolone cheese
½ cup grated Parmesan cheese
Salt and pepper to taste
4 servings Spaghetti noodles


Directions:
Directions:
Cook spaghetti according approximately 6 minutes. The spaghetti should be pliable, but not completely cooked.

Combine tomato sauce and Italian seasoning. Set aside.

Preheat oven to 375ª F.

Season chicken liberally with salt and pepper. Slice eggplant crosswise very thinly, and season with salt and pepper. Coat chicken with bread crumbs.

Spray a 9” x 9” casserole dish with non-stick spray. Spread ½ cup of the tomato sauce on the bottom of the casserole.

Top sauce with spaghetti, then top the noodles with remaining tomato sauce. Top the sauce with chicken, and the chicken with eggplant. Top the eggplant with sliced provolone cheese.

Bake for 45 minutes, remove from oven and sprinkle parmesan cheese over all. Let stand for 5 minutes before serving.

I love this dish. Again, something that looks and tastes like you've spent hours preparing, but takes practically no time, and is absolutely wonderful!
