Chicken Gnocchi Soup Recipe

1 tbsp EVOO
4 tbsp butter
1 onion, diced
½ c celery, diced
1-2 garlic cloves, minced
¼ c flour
1 qt half & half
2 c chicken broth
1 c cooked chicken, shredded
1 tsp parsley
½ tsp thyme
¼ tsp nutmeg
1 tsp salt
1 c carrots, shredded
1 c baby spinach
1 pkg gnocchi

In a Dutch oven, heat oil and butter over medium heat, sauté onion, celery and garlic until translucent, about 5-7 minutes.

Stir flour into onion mixture, and cook for 2-3 minutes.

Add chicken broth bring to a boil and add gnocchi, cook until gnocchi starts to float.

Add remaining ingredients, bring to a simmer. Simmer for 20-25 minutes, ready to serve.
