Marinade

1 c water
⅓ c teriyaki sauce
¼ c tequila
1 lime, juiced
3 garlic cloves, minced
½ tsp salt
¼ tsp ground ginger
4-6 boneless, skinless chicken breasts or thighs


Dressing

¼ c real mayonnaise
¼ c sour cream
½ Roma tomato, seeded and finely diced
½ jalapeño, seeded and finely minced
1 tbsp milk
1 tsp chili powder
¼ tsp onion powder
¼ tsp dried parsley
¼ tsp hot sauce
⅛ tsp dried dill weed
⅛ tsp cumin

Directions:
Directions:
Mix all marinade ingredients in a gallon size ziplock bag, along with chicken. Marinate for at least 2 hours.

Grill chicken 7-10 minutes per side, or bake 20-25 minutes at 350º, or until done.

Coat chicken with a generous dose of the dressing, cover with shredded cheese return to heat until cheese is melted.

Serve on corn chips (either store bought or try frying your own corn tortillas cut in strips) with Pico de Gallo, Guacamole and sour cream. I also like to serve with Spanish rice and black beans.
