4 chicken breast halves; boiled and shredded
½ c. mayo
1 10 ¾-oz can of cream of mushroom soup
1 ¼ c. cooked rice
½ c. chopped celery
¼ c. chopped onions
1 8-oz can water chestnuts
salt and pepper to taste
½ a stack of Ritz crackers; finely crumbled
1 T. butter

Directions:
Directions:
1. Combine first 8 ingredients and pour into 2-qt. casserole dish.
2. Melt butter and mix with cracker crumbs. Sprinkle over casserole.
3. Bake at 350º for 45 minutes.
4. Can be prepared ahead of time and bake later.
