1 c. grated zucchini
1 c. sugar
½ c. vegetable oil
2 large eggs
1 tsp. vanilla extract
1½ c. all-purpose flour
1½ tsp. ground cinnamon
¾ tsp. salt
½ tsp. baking soda
½ tsp. baking powder

Directions:

Place a rack in the bottom third of the oven and preheat to 350º. Grease a 9x5 inch loaf pan with butter, oil, or cooking spray. In a large bowl, whisk together zucchini, sugar, oil, eggs, and vanilla. In a medium bowl, whisk together the flour, cinnamon, salt, baking soda, and baking powder. Using a rubber spatula, gently fold the flour mixture into the zucchini mixture just to combine. Pour the batter into the prepared loaf pan and smooth the top. bake until a toothpick inserted into the center comes out clean and the top is golden brown., 1 hour and 5 minutes to 1 hour and 10 minutes. Let cool in the pan on a wire rack for 10 minutes. Then pop the bread out of the pan and let cool completely on the rack before slicing and serving.
