1/4 cup butter

1cup granulated sugar

1 egg, beaten

1 cup flour

1/2 teaspoon EACH of baking soda, baking powder, cinnamon, nutmeg, and salt

3 cups apples, pared and diced

1/4 cup chopped walnuts

1 teaspoon vanilla

2 Tbsp. granulated sugar

Directions:
Directions:
Preheat oven to 350º
Cream together butter and sugar.
Add beaten egg to creamed mixture.
Mix together flour, soda, baking powder, salt and spices.
Add dry ingredients to creamed mixture.
Stir in vanilla, nuts and apples, by hand.
This will seem dry at first but will loosen up as you mix.
Spread in greased and lightly floured 8"x8" pan, sprinkle remaining 2 tablespoons sugar over top of batter before placing in oven.
Bake for 40-45 minutes.
Serve warm with vanilla ice cream or whipped cream.

This recipe appeared in the Southbridge, MA., Central Baptist Church Ladies fundraising cookbook back in the 1950's. My mother-in-law Lillian Thompson was a member of that group and this was one of her favorite recipes and she made it often especially during apple picking season.
