8 medium potatoes (redskins best)
small onion
2 tsp salt
⅛ tsp pepper
2 tsp hot water
⅓ C mayonaise
1 T. vinegar
½ C green pepper
¼ C pimento
½ C celery
3 or 4 hard cooked eggs
Final dressing: ½ C mayo, 1 T. mustard, 2 tsp sugar

Boil potatoes until just done, not mushy. Cool somewhat with cold water but peel and cut up while still hot or warm. Add onion, salt, pepper, water, mayo and vinegar and mix with potatoes. Let cool few hours or overnight. Add remaining ingredients and final dressing. I like to have egg slices and paprika sprinkled on top. Most often I leave out green pepper and pimento due to family preferences.

Back to dating days -- after Saturday night movie dates with Gerald we often came back to my house and got this potato salad started -- in preparation of a Sunday picnic at Lake Michigan (see photo). Didn't realize I always gave him the job of cutting up the onion until one day he brought me a present. How romantic! An onion chopper! Guess he had had enough of the cutting up onion job. He usually brought tenderloin steak filets (since he worked at a meat market). Guess I was supposed to be impressed but had no idea they were top of the line and expensive! My experience with steak up to that point was round steak fried in a frying pan.
