Ingredients:
Ingredients:
1 loaf white bread or seasoned stuffing bread (hard to find)
2 tsp poultry seasoning
tsp pepper
1 C onion, chopped
2 C celery, chopped
Cooked giblets, chopped or 1/2 # pork sausage browned (drain fat off)
Broth (turkey or chicken)

Directions:
Directions:
A firm type white bread and a few days old is best. Cut into cubes. Cook onion and celery in butter over low heat until soft but not browned. Mix with the bread cubes, add giblets or sausage and turkey or chicken broth to desired moistness. Use as stuffing for the bird or bake separately.

Personal Notes:
Personal Notes:
Mary Thomas: This recipe came from Laura Thomas (Gerald's Mom). It was the first stuffing I really liked. The key for me was the thoroughly cooked onion. When dating Gerald I was invited for a turkey dinner -- had not planned on eating the stuffing (not a favorite of mine) -- he literally stuffed a forkful into my mouth to force me to try it! Embarrassing in front of his parents! Lo and behold it was delicious!

Chris Gray: I've found stuffing bread that comes dried and seasoned in bigger chunks that works as a good substitute for the bread grandma uses (usually found near the "Stovetop" brand stuffing). However, do not use the stuffing bread that has dried thyme leaves as it does not simulate the original recipe very well at all. Also, I usually use sage flavored ground pork sausage.
