Chocolate Zucchini Bread Recipe

1/3 cup cocoa
3 cups flour
1 1/2 t baking powder
1 t soda
1 t salt
4 eggs
3 cups sugar
1 1/2 cups vegetable oil
1 t vanilla
3 cups grated zucchini
1/2 cup chocolate chips
1 cup chopped nuts, if desired

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. Sift flour with cocoa, soda, baking powder and salt. Set aside. In large bowl, with electric mixer at high speed, beat eggs until light and fluffy. Gradually add sugar 1/2 cup at a time, beating well after each addition. Add oil and vanilla. Beat well. Add dry ingredients, 1/3 at a time, mixing until smooth. Add zucchini and chocolate chips. Pour in prepared pans and bake 1 hour and 15 minutes or until toothpick comes out clean.
